Til Peanut Barfi (Gajak)

Preparation time: 10 minutes Cooking Time: 10 minutes
Ingredients:
- 60 Grams of Sesame seeds (Til)
- 60 Grams of Peanuts
- 150 Grams of crushed jaggery
- half tsp of green cardamom powder
- half tsp of ginger powder
- 1.5 tbsp. of ghee (clarified butter)
Instructions:
1.) Heat a pan on low flame, roast the sesame seeds until they're golden in colour. Then keep it aside (do not over roast them).
2.) In the same pan roast peanuts on low heat, until the colour changes. Take it out from the heat and let it cool. After cooling it down, remove the skin from the peanuts, and keep it aside.
3.) In a mixer jar, put sesame seeds and grind it in a coarse powder. Transfer it to a bowl.
4.) In the same jar, grind the peeled peanuts into a coarse powder and transfer it to the same bowl with the sesame seeds.
5.) Add half tsp pf green cardamom powder, half tsp of ginger powder. Mix it well and keep it aside
6.) In a pan add 1.5 tbsp. of ghee, and melt it on medium heat. Then add crushed jaggery, and mix continuously until the jaggery is melted (do not over cook it, otherwise it will become hard). Just cook it until bubbles show up. Add the grinded sesame seeds and peanut mixture. Take it out from the heat and mix well.
7.) Then transfer to a greased tray or plate, and press it down into the tray so it is straight and leveled. Let it cool for a while, and sprinkle with sesame seeds.
8.) Finally cut it in any shape you desire. Barfi is ready to eat
