If you ever wanted to make real Trini food, then you just found the Trinidadians secret weapon.
Green seasoning is the most amazing blend of fresh herbs that are a quintessential part of Trinidad cooking. Its used as a marinade for meats, stews, curries ,seafood and so much more. Wonderfully fresh its loaded with nutrients and enhances flavor of your dishes.
You can use a lot of different green herbs in your green seasoning, do whatever you fancy.
Anyway in this recipe I use, cilantro, although in Trinidad we use Chadobeni or Recao but I could not find Chadobeni at the time, so Cilantro it was. Other Ingredients are Scallions, Garlic, Thyme, Lime Juice and Parsley. You can also add fresh ginger, pimento peppers and spanish or big leaf thyme. Main thing, this is just a guide, so use it as that.
