Locho | Surati Locho Recipe | Gujarat famous street food Surati Locho:
Ingredients:
- 1 cup chanadal
- 2 tbsp urad dal
- 2 tbsp rice
- 1/2 cup poha
- 1 cup yogurt
- 1 tbsp ginger chilli paste
- 1 tbs turmeric
- 1/2 tbs eno
- 1/2 tbs soda
- lemon juice
- Locho masala
- onion chopped
- sev
- salt to Taste
- oil/butter
Process to Make Surati Locho:
+ Wash the dals very well and soak both together for 6 to 8 hours or overnight….
+ Wash and soak the poha in water for 10 minutes when to grind the dal…
+ drain all the water from dal and poha.
+ place Dal,poha and 1 cup of yogurt into a mixer jar
+ Blend them into a smooth but little bit coarse paste using 1 and ¼ cup of water(if needed)
+ Place the batter in bowl. Cover it and keep this batter for fermentation in a warm place for about 6 to 8 hours.
+ Once the batter is fermented,
+ Take 2 cup of portion in separate bowl….
add ginger chili paste, salt, turmeric powder, 1/2 tbs eno and 1/2 tbs soda and lemon juice to activate soda…
+ Add 3 tbsp water and make smooth batter…
+ Now, heat some water in a steamer. Take a steel plate and grease it with some oil.
+ Mix it well…
+ Pour ⅓ rd of the prepared batter in the greased plate…
+ Now, place the batter filled plate in the steamer…
+ cover the steamer and let it cook for at least 10 to 15 minutes….
+ Surti locho appears to be puffy and cooked.
+ Take out the plate and with the help of a spatula, transfer the locho in a serving plate.
+ Lastly, drizzle it with some oil/butter, locho masala, sev, chopped onion and green chutney….
