Mango - 3
Sugar - 1 cup
Salt - 1/2 tsp.
Black Salt - 11/2 tsp.
Pepper - 1 tsp.
Roasted jeera - 1 tsp.
Ginger - 1 small piece
Pudina leaves - 1 handful
Water - 1 glass
Lemon - 1
Cook the mango in a pressure cooker with 1 glass water, till it becomes tender. Strain and keep the water aside. Peel the mangoes. Add the flesh into the jar. Add ginger, pudina and the strained water - grind to a pulp.
Strain the pulp to a bowl and bring to boil. Add sugar, salt, black salt, pepper and roasted jeera. Add the lemon juice. Let it boil. The concentrated green mango syrup is ready.
Store in a glass bottle.
To make the green mango juice -
Add the concentrated syrup to a chilled glass. Add chilled water and stir well.
Add ice cubes and garnish with pudina leaves.
Rub the brim of the glass with a lemon rind.
Decorate the brim with a mixture of salt and kashmiri chilly powder.
Serve chilled.
