1. Gnocchi: Boil the potatoes until tender, then peel and mash them. Add the egg, flour and salt and mix thoroughly.
2. On a work surface, divide the dough into several portions and roll out long cylinders from each one. Cut the gnocchi into pieces about 2 cm long.
3. Sauce: Heat the olive oil in a large frying pan, add the chopped garlic and fry until golden. Add the tomato passata, salt and sugar and mix well.
4. Boil the gnocchi in salted water and stir into the sauce.
5. Transfer the gnocchi to plates and sprinkle with grated cheese. Serve hot.
