HISTORY OF THE SUGAR SYRUP:
The word ‘syrup’ derives from the latin ‘sirupus’, meaning the same. Syrups have been around as long as history can remember, being essential in cooking and mixing across all cultures.
Honey, for example, is one of the oldest natural forms of sugar syrup used in human culture, not just for cooking but as a preservative also. Other naturally occurring syrups have also been used for thousands of years, such as agave nectar and maple sap.
‘Sugar syrups’ as we know them today were first used commonly in the ‘Golden Age’ of cocktail culture in the late 1800’s, before rising to prominence again with Tiki Culture and the more recent Cocktail Renaissance. Now they are a staple of any cocktail bar and one of the most exciting places for flavour innovations in Mixology.
There are so many ways to experiment and play with flavours when it comes to sugar syrup. You can use different sugars like Demerara or Muscovado for more complex flavour profiles, you can adjust the sugar levels to make a rich sugar syrup (2:1) and you can add different ingredients like fruits and herbs to the process to make flavoured syrups!
