How to make smoked pepper jack meatloaf using my Masterbuilt Electric Smoker.
Ingredients
* 2 pounds 80/20 ground chuck
* 1/2 cup Panko bread crumbs
* 1/2 medium red onion minced
* 2 cloves garlic minced
* 2 eggs lightly beaten
* 1 Tablespoon Worcestershire sauce
* 2 Tablespoons whiskey
* 2 Tablespoons steak rub
* 1/4 cup milk
* 8 oz pepper jack cheese cut into strips
For the sauce
* 1/2 cup ketchup
* 1/3 cup brown sugar
* 1/4 cup whiskey
* 1 Tablespoon steak rub
* 2 teaspoons red pepper flakes
Instructions
1. Heat smoker to 225*F, I use Hickory or oak
2. In large bowl mix ground chuck, bread crumbs, onion, garlic, eggs, Worcestershire, 1T steak rub, 2T whiskey, and milk. Mix gently by hand until just combined.
3. Place 1/2 of your meatloaf onto a grill basket. Layer the cheese leaving about 1 inch of meat around the edges.
4. Top with remaining meatloaf pinching the edges to seal in the cheese.
5. In a small bowl mix together the ingredients for the sauce and pore over the top of the meatloaf allowing it to run down the sides.
6. Place meatloaf in the smoker at 225* and cook for 4 hrs. or until it reaches 165*F, then pull the loaf out and let it rest for a few minutes before serving.
