Today’s recipe is delicious rava ukadiche modak. If you find it difficult to make tandalachya pithache ukadiche modak, then this is a good option for you. This is a very easy and simple recipe. No one will come to know that these modak are made from rava. They look perfectly like ukadiche modak and taste almost same. The basic ingredient needed to make ukadiche modak is rice flour. If you don’t have it with you, then this is the recipe for you. These modak turn out nice and soft and remain so for longer time. Try this recipe at home and write to me. Ingredients:
• 2 cups grated fresh Coconut
• 1 cup Jaggery
• 7~8 chopped Cashew nuts (Optional)
• 7~8 chopped Almonds (optional)
• 1 tsp ghee
• 1 tsp Poppy seeds
• 1/2 tsp Cardamom powder
• A pinch of Nutmeg powder
• 1 1/2 cup Milk
• 1 cup fine Rava
• Saffron strands
Method:
• Heat up ghee in a pan and add poppy seeds and dry nuts.
• Adding almonds and cashew nuts id optional. You can kip it if you don't want.
• Fry it well for just about 30-40 seconds and add fresh coconut.
• Fry the coconut well for about 4-5 minutes and add jaggery.
• Mix well and fry it together for about 7-8 minutes.
• Add cardamom powder and nutmeg powder and mix well.
• Turn off the gas and stuffing is ready.
• Heat up milk in a pan and bring it to boil.
• Turn the heat to low and add rava.
• Mix in quickly. No lumps of rava should be formed.
• When the mixture comes together like dough, cover the pan and turn off the gas.
• Let the mixture rest as it is for about 5 minutes.
• Take the ukad out into a dish and knead it well when it is still hot.
• Take out small portion from the dough and make it smooth and even.
• Make a pari and pinch it to make kalya or paklya.
• Fill in the stuffing and close the modak.
• Seal it well and remove excess dough.
• Transfer the modak on a banana leaf and garnish with a saffron strand.
• Heat up about 1” water in a steamer and bring it to boil.
• Steam the modak on medium heat 8-10 minutes.
• Take the modak out and rava ukadiche modak are ready.
• Serv with lot of ghee.
