I made caesar salad for lunch and it was delicious. This is Kenji's recipe from The Food Lab, it is also posted on Serious Eats. I went against Kenji's advice here and did not switch to a bowl and whisk to incorporate the extra virgin olive oil. Using the immersion blender resulted in a pretty thick dressing but I enjoy it because it clings to the lettuce leaves better.
Full disclosure, I burnt the croutons I put in the oven because I forgot about them, the croutons I pull out of the zip lock bag are some I made a few days back. Make croutons yourself, they are way better than store bought! Also, make this recipe! Its awesome as a sandwich spread and even dipping sauce, I dare say. It is also super easy to make.
