How to Make a Quick Mackerel & Spinach Curry Dish
This is the perfect dish to cook up when you're in need of a last minute curry. It literally takes minutes and tastes so delicious!
This quick and easy dish is easily one of the favourites in my home and my little boy absolutely loves it!
Here's what you will need...
2 tinned mackerel fillets (in olive oil, sunflower oil or brine)
fresh spinach (I usually chop them but as I used baby spinach today I didn't bother)
2 cloves garlic
2 green chillies (or more if you like a kick)
2 onions
1 tomato
2tbs oil (you will also add the oil/water from the tins after you've added the spice)
salt to taste (I used about half a tbsp)
half tbsp turmeric powder
1 heaped tbsp ground coriander
serve with rice or if you like you can also use it as filling for pastries and samosas!
