Singaporean Rice / Singaporian Rice Recipe
This is one of my favourite recipes and I love to eat this juicy, flavourful, sweet, and sour rice. The dish was given Singaporean name but it is a Pakistani recipe and was popular in weddings.
Ingredients for Mayonnaise Sauce:
mayonnaise 1 cup
ketchup 1/2 cup
Red chilli flake 1/2 tsp
minced garlic 1/4 tsp
Ingredients for Chicken and Veggies Gravy:
boneless Chicken cut into cubes 500 grams
red and yellow pepper cut as cubes
1 carrot finely cubes
1 small onion chopped
1/2 cup cabbage
2 tbsp National Chicken tikka masala
1 tbsp ginger/garlic paste
1 to 2 green chillies chopped
juice of half a lemon
1 tbsp soya sauce
1 tsp cumin powder
2 tbsp chopped coriander
1 tsp red chilli flakes
1 tbsp ketchup
1 tbsp. corn flour mixed in 3 tbsp water
4 tbsp oil
salt to taste
Other ingredients :
2 cups Extra long Basmati rice
200 gm Spaghetti
Prepare the Rice
You will need 2 cups of rice, bring a pot of water to boil, add salt and 1 tbsp oil into it. Add rice that has been pre-soaked for 20mins. Boil until rice is almost done, drain the water and put the rice back into the pot. Add 1 tbsp butter & cover the lid, put to steam (on dum) for 15 minutes
Prepare the Spaghetti
You will need 200gm spaghetti pasta. Boil as per package instructions, adding some salt and oil into the boiling water. Drain, then drizzle 1 tbsp. of oil on the pasta to prevent it from clumping together. Put in a hotpot and set aside.
Prepare the Chicken Gravy
Heat the oil in a pan. Add the chicken, ginger and garlic paste and onions. Fry for a few minutes until the chicken colour changes. Then add the capsicum, carrots and cabbage. Stir fry until the chicken is about done. Add the green chillies, chopped coriander, soya sauce, ketchup and lemon juice, plus chilli flakes, salt and National Chicken tikka masala. Cook together for 2 minutes, then add the corn flour mixed in water. Lower the heat and let the gravy simmer for a few more minutes.Adjust taste and turn off the heat.
For the layering
Take a dish, add Laila Extra long Basmati rice rice to cover the bottom. Then follow it with the spaghetti to cover the rice and then drizzle mayonnaise sauce on it. Then pour the chicken gravy over the spaghetti. Drizzle the mayonnaise sauce all around the edges and some in the centre. Finally garnish with fresh coriander and green chillies.
