Soy braised burdock root. This recipe was originally shared with me by @keilen.shigematsu I've made some minor adjustments over the years and it has become a yearly tradition with the burdock I forage. I usually make a large batch and freeze most of it to use later. You can find the full recipe in the burdock article on my website, but it's as easy as mixing the ingredients together and simmering them until the burdock is tender.
1lb burdock root
1/4 cup dried shiitake or wild mushrooms
1/4 cup dried wakame or foraged seaweed
1/4 cup soy sauce
1/3 cup sugar
2 tbsp fish sauce
1 tsp ginger, minced
2 cloves garlic, minced
2 tbsp Korean chili flakes
Water to cover
(optional) 1 tbsp of wild mushroom powder for extra umami.
