Beef ho fun 干炒牛河 is a well-known and popular authentic Chinese dish. Fresh ho fun is best for cooking this dish. Cooking this dish need super high to acquire the wok scent flavour; as such the beef and ho fun are both fried separately before combined for the final cooking. The main flavour is soy sauce aroma, saltiness and wok scent…a kind of burnt flavour.

Beef ho fun ingredient
120g beef
180g fresh ho fun
50g onion (sliced)
80g bean sprout
1 stalk spring onion
Condiments
Dash of wine
Dash of pepper powder
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
1g MSG
Half teaspoon garlic oil
Method
Heat wok with some oil and stir fry the beef for 4 minutes to cook; set aside.
Heat wok very hot and stir fry ho fun with some dark soy (half teaspoon) sauce for 3 minutes; set aside on a plate.
Clean and heat wok with some oil (again very hot); add onion, bean sprout, ho fun and beef. Stir fry in maximum heat for a minute.
Add dash of wine and pepper powder.
Stir fry for a bit.
Add light soy sauce and MSG.
Stir fry for some more.
Add dark soy sauce and stir fry for some more to complete the dish.
