INGREDIENTS
-Crab paste, Pork belly, Fresh whole Blue swimmer crabs, Fresh Octopus, Cockles, Tomatoes, Fried Tofu, Eggs, Rice Vermicelli, Vietnamese Ham, Shrimp paste, Water, Fish Sauce, Bean Sprouts, Morning Glory and Fresh Mint.
METHOD
-Cook vermicelli strain and dry in a basket
- Boil Pork belly till tender them thinly slice & leave to cool.
-Boil the crab and de-shell
-Boil Octopus till tender then slice thinly then leave till cool.
-Keep all boiling liquid for the soup base
-Combine all boiling liquid in a large pot, add chopped tomatoes and boil till tomatoes soften.
-Add Tofu and simmer till soft
-In a bowl whip 1 dozen eggs then whisk in the Crab paste
-Gradually add Egg and Crab paste to boiling broth gradually
-Season soup with fish sauce to taste
SERVING SUGGESTION
-Warm the noodles on a strainer in a pot of boiling water then serve in a bowl
-Repeat warming process with sliced meat and seafood then top them on the noodles
-Ladle in the hot soup along with all the chunky bits from the pot over the bowl of noodles
-Add some shrimp paste and fresh greens/ bean sprout then eat without delay
-Return to the video and give it a thumbs up.
