There are many Sri Lankan dishes with two or more vegetables combined. This recipe is for Carrot & Spinach dry curry. The twist is that I have added curd (plain yogurt) instead of milk/coconut milk.
Buffalo curd is a favorite especially in southern Sri Lanka. My family used to enjoy a spoonful of curd with their rice & curry in addition to curd with treacle. Although curd is not used in typical Sri Lankan curries as in Indian cuisine, it is certainly a favorite staple in Sri Lankan food culture.
