There are literally hundreds of different variations of Pork Adobo – one in every household in the Philippines. They have evolved from a simple Pork in vinegar with pepper corn dish to nearly a stew. The inclusion of potatoes and carrots. This is my version of Pork Adobo – with a little soy sauce which was introduced over time. This is certainly a tasty dish with not much cooking involved.

Ingredients
Pork belly sliced
Oil
5 cloves of garlic minced
Black pepper corns
3 tbsp coconut vinegar – use any vinegar
3 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sugar
bay leaves
water
pinch of salt and pepper
I actually love this served with a good mashed potato and green beans.
