Stuffed Aloo Tikki - Stuffed Potato Cake - Easy Snack/Appetizer Recipe

I make these aloo tikkis quite frequently as they are quick and easy to make. You can serve it as snack or appetizer or pack it in your lunchboxes and great for picnics. You can also serve it as a side along with your main meal.
Ingredients required for making stuffed aloo tikki -
* 4 very large potatoes. I love using Yukon Gold potatoes for these but you can use any variety. Boil the potatoes till they are tender. The potatoes need to cool down completely before proceeding with the recipe. I sometimes cook the potatoes the night before and keep them in the refrigerator. I that way the potatoes become drier and easier to manage. Please mash the potatoes very well so that there are no lumps.
* 1/3 rd cup frozen/fresh green peas. if using frozen peas, allow a pot of water to come to a boil. Add the green peas to the boiling boiling along with a sprinkle of salt. Blanch them just for a minute, then drain and run under cold tap water. Please make sure you drain all that excess water.
For the potato tikkis -
* 2 heaped tablespoons cornstarch(cornflour). Can even use plain flour
* 2 teaspoons bhaja masala. Recipe for bhaja masala - [ Ссылка ]
Please note you can skip bhaja masala or you can use chaat masala or any seasonings of your choice.
* Little less than a teaspoon of salt. Please taste the potatoes and add more according to your preference.
* freshly cracked black pepper
For the green pea filling -
* salt to taste
* 1 teaspoon bhaja masala or seasonings of your choice
* 1 fresh green chilli finely chopped
* 1 teaspoon fresh lemon juice
For frying -
* 2 tablespoons oil + 2 tablespoons butter to start with. I added 2 more tablespoons oil later as things were looking too dry.
You can serve this with any sauce of your choice or green chutney
