Raspberries are my favorite berry! I've loved them every since I was a kid when my family would do our yearly trip of visiting a pick-your-own raspberry farm in Easton, CT. While picking them, I couldn't help eating as much as--if not more than--what I actually picked. I still love them as an adult, but now and then I love to create desserts featuring them. And for me there's no better raspberry dessert than the classic English trifle. I have adored trifles ever since I first tried them during a study abroad summer semester in London.
Taking all this inspiration into account, I've created my own version of trifle. It's kind of Italian and American all at the same time. That's because I use Italian butter cookies and mascarpone cream cheese to create this no-bake cheesecake-like flavor reminiscent of the American boxed no-bake cheesecakes that I grew up eating. And then there's white chocolate thrown into the mix to make this dessert even more decadent. Prepare these individual raspberry trifles before summer's over while raspberries are still available in the markets. Enjoy the fruits of your labor, especially if you've picked the berries yourself!
