Stir-fried chicken served differently with rice noodles flavoured with imli ki chutney
STIR-FRIED CHICKEN WITH NOODLES
Ingredients
1 boneless chicken breast
100 gms rice noodles
3-4 spring onion bulbs
2 tbsps oil
1 medium green capsicum
1 medium red capsicum
½ inch ginger
4-5 garlic cloves
1 tbsp cornstarch
1 tsp dark soy sauce
2 tsps green chilli sauce
Salt to taste
1 tsp sesame oil
2 tsps imli ki chutney
1 tsp white vinegar
1 tsp toasted sesame seeds
Method
1. Heat sufficient water in a non-stick pan.
2. Diagonally slice spring onion bulbs.
3. Heat oil in another non-stick pan. Cut green and red capsicums into medium cubes.
4. Slice ginger and garlic.
5. Break the rice noodles and put into a bowl, add hot water and let them soak for a while.
6. Add ginger, garlic and spring onions to the oil in the 2nd pan.
7. Diagonally slice chicken and add and mix.
8. Mix cornstarch with ¼ cup water in a small bowl.
9. Add soy sauce and green chilli sauce to the pan and mix. Add green and red capsicums and mix. Add a little salt and toss.
10. Drain the noodles and place on a serving plate and drizzle sesame oil over them. Add imli ki chutney and mix lightly.
11. Add the cornstarch water to the chicken mixture and mix well. Add vinegar and mix well.
12. Put the chicken mixture over the noodles in the serving plate, sprinkle toasted sesame seeds on top and serve hot.
