Recipe:
- 3,7 lbs/1,65kg Black Angus Tri Tip
- 1 full teaspoon smoked paprika
- 1,5 tablespoons whole peppercorns. crushed
- 2 tablespoons sea salt flakes, if using normal salt 1-1,5 tablespoon is enough
- Olive oil
- Fresh thyme
- Baby potatoes
- 2-3 tablespoons classic yellow mustard
- 1,5 tablespoons soya sauce
- Half a tablespoon Worcestershire sauce
- Half a teaspoon brown sugar
- Salt and pepper
Place the meat in a cold pan, fat side down and turn the heat on high to sear it.
Roast in a preheated oven, fan on, 392F/200C for 15 minutes, then lower the temp. to 284F/140C, turn off the fan and stick a thermometer in the middle of the thick end set to 133F/56C, my piece took about an hour all together.
When ready, let the meat rest for 15-20 minutes before cutting!
