Belgian Endive au Gratin with Mashed Potatoes
Ingredients:
5 heads Belgian Endive
4 tbsps. butter
2 tbsps. flour
1/2 cup water
1 1/2 cup milk
250 g Emmental cheese
5 slices of ham
1 kg potatoes
1/2 cup sour cream
salt and pepper to taste
Instructions:
1. Prepare endives by washing and removing the hard core at the bottom part. Melt 1 tbsp. butter in a pan. Add endives and 1/2 cup water. Bring to boil until it soft. Drain the endives, remove extra moisture as much as possible.
2. Boil potatoes in another pot. Cook for 20 minutes until it's soft.
3. While potatoes are boiling. Melt 3 tbsps. butter in a saucepan for the bechamel sauce. Add flour and stir well. Add milk, stir until it thickens. And add 150g cheese, stir until it melts. Seasons with salt and pepper. Set aside for toppings later.
4. Make mashed potatoes. When potatoes are ready add sour cream, salt and pepper. Mashed well and set aside.
5. Roll the endives in slice ham and place in ovenproof dish.
6. Assemble the mashed potatoes on the side.
7. Pour the bechamel sauce over the ham rolls. Top with 100g cheese.
8. Grill in the oven for 15 minutes or until the cheese is golden brown.
