Seriously, it is so simple to make that you will never be without Ethiopian cheese as long as you have access to the right kind of milk. Ethiopian cheese is essential for balancing the red, spicy curries and stews, such as doro wat and kay wat, that are so common to Ethiopian food. If you have never tried Ethiopian cheese, you can expect it to taste similar to Greek feta cheese but with a moister consistency.
