Ingredients:
1 1/8 Tbsp (10 grams) unflavored gelatin + 1/4 cup (60 ml) cold water
1 cup (about 220 grams) sugar + 1/4 cup (60 ml) water
1 Tbsp (20 ml) lemon juice (optional)
1 Tbsp powdered sugar
1 Tbsp cornstarch

Instructions:
1. Cover an 7 x 7-in or 8 x 8-in baking pan with plastic wrap. Brush the plastic wrap with vegetable oil.
2. In a small bowl or cup, add 1 1/8 tablespoons of unflavored gelatin, pour in 1/4 cup cold water and let it swell for a couple of minutes.
3. In a medium sauce pan, add 1 cup sugar, 1/4 cup water, and 1 tablespoon lemon juice, stir well. Over medium heat, stirring occasionally, until sugar dissolves and boils. Remove from heat.
4. In a meantime, melt the swollen gelatin in a steam bath or microwave.
5. Beat the melted gelatin at low speed and constantly pour in the sugar mixture in a thin stream. Increase the speed gradually and beat until mixture is fluffy, airy and stretchy. (takes about 8-10 mins)
6. Quickly pour the marshmallow mixture into the prepared pan. Lightly oil a piece of plastic wrap and then cover the top of the marshmallows.
7. Refrigerate marshmallows for 2 hours or overnight.
8. Make marshmallow dust, mix 1 tablespoon powdered sugar and 1 tablespoon cornstarch in a bowl. Mix until thoroughly combined.
9. Sprinkle a surface with marshmallow dust. Remove marshmallow from pan and lay on top of the marshmallow dust. Dust the top with marshmallow dust as well. Use a large, sharp knife to cut into squares. Separate pieces and toss to coal all surfaces with marshmallow dust.
10. Store in an airtight container. Enjoy! 😊
