ROASTED RED PEPPER DIP
INGREDIENTS
1 package firm tofu, drained, not pressed (or one 15oz can of rinsed and drained white or cannellini beans)
6oz of jarred roasted red pepper or one large fresh roasted red pepper
2 TBSP tahini
Juice of one lemon
2 cloves garlic
Salt to taste
Red pepper flakes or paprika for garnish optional
DIRECTIONS
Blend all ingredients in a high speed blender until smooth. Taste for lemon and salt. Garnish with red pepper flakes or paprika.
