Blend ingredients:
2pcs Onion
1 inch Garlic
10pcs Bird's Eye Chili
½ inch Turmeric
Deep-Fry ingredients:
Oil (about half a pot)
1 Whole Chicken (Cut into 12 pieces)
1tspn Turmeric
Fry ingredients:
4tbsp Oil
Lemongrass
Blended ingredients
Other ingredients (to be mixed after adding chicken):
2pcs Tamarind
250ml Coconut Milk
200ml Water (Optional)
A pinch of Salt
A pinch of Sugar
Directions:
1. Blend onion, garlic, bird's eye chili and turmeric in a blender until the mixture becomes a paste.
2. Put chicken in a bowl, add turmeric, marinate.
3. In a pot, heat oil; add in chicken, deep-fry to golden brown, set aside.
4. Using another pot, heat oil; add lemongrass, briefly fry until fragrant. Put in blended paste mixture gradually and mix.
5. Stir the mixture slowly on medium-low heat until oil separates.
6. Add in chicken and mix well for 15 minutes.
7. Add in tamarind, coconut milk and water (if needed). Add in salt and sugar to taste. Stir and bring to boil. Serve hot and enjoy!
