This is my wonderful Filipina wife's lumpia recipe, it's easy to make and delicious, I've also included the basic recipe for the dipping sauce.
After making the recipe I realized I didn't adjust the amount of soy sauce used as the actual recipe called for a quarter cup of soy sauce but that would be for a kilo of meat not one pound (a kilo is 2.2 pounds) so unless you like real salty foods reduce the soy sauce to 1/8th cup or just a couple tablespoons.
Lumpia filling:
1 Pound ground pork
5 Cloves garlic minced
2 Green onions (scallions) sliced thin
1/2 large red onion diced
1 Large carrot diced
1 Leek sliced thinly
1/4 cup cilantro chopped
1/8th cup soy sauce
1 8 gram packet Magic Sarap seasoning
1 cup of water
Saute the garlic and red onion until the garlic odor is released then add in the rest of the vegetables and saute about five minutes to soften them, then add ground pork and brown the pork. Once the pork is browned add the Magic Sarap seasoning, cilantro and soy sauce and saute a couple more minutes then add the water, cover and simmer until water evaporates stirring occasionally, once the meat mixture is thickened and all the water is gone, turn off heat and set aside while you prepare the wrappers.
Generally the wrappers come frozen so get them out and let them thaw at least 30 minutes prior to using them, you may need to cover them with a damp towel to keep them from drying out also.
Wrap the pork mixture in the wrappers and seal with either an egg wash (one egg with a little water mixed in) or just with water.
Fry in your favorite cooking oil until lightly browned and place on paper towel to drain or on rack like I did in the video.
This recipe works for pork, beef, chicken, turkey or a combination of any of them, traditionally filipino lumpia is either pork or pork and beef mixed 50/50, you can double, triple or quadruple this recipe easily depending on how much you want to make.
This recipe makes about 20 lumpia depending on how much meat you use in each wrapper.
Dip:
1/2 cup white vinegar
2 cloves garlic smashed
diced onion
cilantro
pinch of salt and pepper
1 tablespoon soy sauce
1 teaspoon sugar
2 hot peppers sliced
