GREEN PASTA 🫢😍🔥 (recipe below) this is actually THE best vegan pasta I have ever eaten!
Ingredients:
- 300g of your pasta of choice (I used spaghettini) 🍝
- 2 handfuls of cherry tomatoes🍅 (abt 300g)
- Olive oil 🫒
- Salt & pepper 🧂
Makes 2 servings!
Sauce:
- 1 cup of packed fresh basil🌿
- half of an avocado
- 1 cup of spinach 💚 (approx a handful)
- 3/4 cup of pasta water 💧
- 1/2 cup of cashews 🤍
- 1 lemon juiced or (1/4 of a cup) 🍋
- 3-5 cloves of garlic depending on your preference (I put 4!) 🧄
- 1 tbsp nutritional yeast💛
- 2 tbsp olive oil 🫒
- Some more salt & pepperr 🧂
(Optional: add grated walnuts on top for a lil crunch!)
Instructions:
1. First, cook your pasta of choice until aldente! Leave over about a cup of pasta water for the sauce!
2. Second, add your cherry tomatoes to a small baking tray, sprinkle with salt and pepper, drizzle with olive oil and mix! Pop it in the oven at 210 °C for 20-25 minutes!😊
3. Third, prepare your sauce by adding all of the ingredients listed above. If you’d like your pasta sauce to be more runny add some more pasta water!
4. Finally, mix add the sauce to the pasta, add cherry tomatoes overtop, salt & pepper to taste and enjoyy😍!! (I highly recommend adding grated walnuts on top!!)
