INGREDIENTS:
1/2 cup water
1 1/2 teaspoons agar agar
1/3 raw cashews soaked overnight, rinsed and drained well
1 1/2 teaspoons arrowroot powder
1/2 cup water
1 1/2 tablespoons lemon juice
1 1/2 tablespoons nutritional yeast
1 garlic clove
dash paprika
seasonings to taste
DIRECTIONS:
1. In a saucepan mix agar agar in 1/2 cup of water and set aside.
2. Add rinsed and drained cashews to food processor with nutritional yeast, garlic, starch, salt, lemon juice and 1/2 cup of water. Blend until it becomes a smooth paste.
3. Bring water and agar agar mixture to a slight boil. Then add blended cashew mixture and boil over low-medium heat until it forms a thick pancake batter like consistency.
4. Quickly transfer to ramekins and store in fridge for at least an hour to set.
5. Carefully remove cashew cheese from ramekin’s and slice and enjoy!
