✓ I was astonished (& educated) to see this Mobile Indian Street Food Cart / Stall, dry roasting these Boongra (Ramakra) - up to this point I had always thought they can only be deep fried.
I am unsure that it's only salt in the hot pan (or wondering if there's also fine grain sand in there as well).
Far far is a popular Indian snack food composed of potato starch and brightly coloured sago. The recipe ingredients may also contain tapioca (cassava and wheat flour)
Far-far puff up instantly when deep fried or dry roasted, they can be eaten either as a snack or served like a popadum alongside a meal.
They are produced in a wide variety of colours and shapes such as wheels, stars, hollow tubes & squares.
If you're wondering what the taste and texture is like, the only similar snack I can compare it with here in the UK is Walkers Quavers crisps.
Many thanks to mobile street vendor and hawker Mr Ramu Bhai. He also makes Popcorn using the same method (which was regretfully not recorded).
