Hope you all are doing good.
Today I am sharing three immune boosting chutney recipes. These are absolutely delicious and so easy to make. These INDIAN chutney recipes can be refrigerated for 3 days and goes really well with idly, Dosa or any other Indian Breakfast. They are loaded with vitamins and has loads of health benefits and can boost your immunity during this pandemic.
I am sharing the recipes below:
1. Mint Coriander Chutney
This is also called Pudina chutney.
You will need:
1 bunch mint leaves
1/2 a bunch coriander leaves
1 large onion ( chopped)
Garlic cloves - 4
Chopped ginger - 1 inch piece
Black mustard seeds - 1 tsp
Urad dhal - 1/2 tsp
Chana dhal - 1/4 tsp
Asafoetida - a pinch
Chopped Green chillies - 2
Salt as required
Sesame oil - 1 tbsp
Method
In a pan, pour about 1 tbsp of Sesame oil and splutter mustard seeds, Urad dhal, chana dhal, Asafoetida, chopped Green chillies,chopped Garlic and Ginger and and fry for a minute.
Then add Mint leaves and Coriander leaves and cook until it just wilts. Don't over cook the greens as it may lose its colour.
Remove from fire, add required amount of salt and little water and grind to a coarse consistency.
2. Spicy Garlic chutney
You will need:
Toor Dhal - 2 tbsps
Grated fresh coconut - 1/2 cup
Peeled Garlic - 12-15 nos
Broken Red chillies - 5
Tamarind - a small piece
Grated Jaggery - little
Salt as required
Sesame oil - 1 tbsp
Mustard seeds - 1/2 tsp
Method:
1. In a small pan, pour 1 tbsp of Sesame oil and add toor dhal and broken Red chiilies. Fry for 2 minutes until the dhal is roasted well.
2.Transfer the dhal and red chiilies to a mixer jar and reserve the remaining oil to roast the Garlic for atleast a minute.
3. Transfer the Garlic to the Mixer jar, then add Grated fresh coconut, salt, Tamarind, Jaggary adding little water if required and grind to a coarse consistency.
4. Heat little oil, splutter mustard seeds and 1 broken red chilly and pour over the chutney.
This Spicy Garlic chutney can be served with Pongal, Upuma, Dosa, Idly or can also be had with steamed rice with ghee.
3. Easy Peanut chutney
You will need:
Dehusked roasted Peanuts - 1 cup
Chopped green chillies - 3 nos
garlic - 3 cloves
small onions - 8 or 9
1 small gooseberry size Tamarind
salt as required
For Seasoning
Coconut oil - little
Mustard seeds - 1/2 tsp
Urad dhal - 1/2 tsp
some Curry leaves
Method:
1. In a mixer jar, add the peanuts, chopped green chillies, garlic cloves, small onions, tamarind and salt and grind to a coarse consistency.
2. Season with mustard seed, urad dhal, curry leaves tempered in coconut oil.
This should be the easiest chutney recipe ever!
Serve with idly, Dosa or any other South Indian breakfast recipes
