ingredients
2 chicken breast
1 tsp salt
a little black pepper
2 potatoes
1 carrots
3/4 oz butter
4 serving of cooked rice
sauce
2 clove garlic, peeled
1 knob ginger, peeled
1 onion, peeled
1 celery stalks
2 tomatoes
3tbsp. vegetable oil
1/2 tbsp honey
3 tbsp curry powder
700 ml chicken stocks
2 bayleaf
1 1/2 tsp salt
1/2 tbsp garam masala
chinese onion or soy-pickled vegetable relish, if desired
steps
1. cut chicken into bite-sized peices and season with pepper and 1tsp salt, peel potatoes and carrots and chop roughly. mince garlic, ginger, onion and celery, cut tomatoes into large pieces.
2. pour 1 tbsp vegetable oil into a pan and stir-fry garlic and ginger on medium heat. when fragrant, add onions and celery, cooked until then soften. add honey and continue stir-frying briefly until the mixture begins to brown(A)
3. add 2 tbsp vegetable oil to (2) on low heat. add flour and curry powder and stir-fry for about 5 minutes. add tomatoes (B) and fry another 2-3 minutes, stirring occationally
4. once tomatoes have shed their fluid, add chicken stocks in 2-3 parts and mix thoroughly each time. if it boilds, skim the top then add bayleaves and 1 tsp salt and simmer on low heat
5. heat half of butter on a frying pan and add chicken (1). cook on medium heat until browned and add to pot (4)
6. heat the other half of the butter in the same frying pan and fry potatoes and carrots. when potatoes surface become translucent, add to pot (4) and simmer on low heat for 30-40 minutes. stirring occationally, until mixture thickens. season with remaining salt, add garam masala powder, mix and turn of heat.
7. serve rice on plate and pour curry on top. add chinese onion and vegetable relish if desired.
