Make sure to follow these 2 simple rules to get a perfectly delicious durian ✅

In Thailand and Cambodia, durian is typically harvested (picked) off the tree when the fruit is nearing maturity but the flesh is still crunchy.

The risk here is that people often pick too early – resulting in durians that do not ripen well off the tree.

Ideally, a picked durian should ripen naturally (without chemicals) and be ready to eat within a 3-day window – that’s it! If it takes longer to ripen than 3 days, the durian will still become soft but it will not be as sweet and it may have more acidic/onion notes than if it was allowed to stay on the tree a bit longer.

So what you’re looking for is a durian that makes a resonant hollow thud when you thump it AND has a very fresh stem. Fresh durian that is already ripe stayed on the tree longer.
