Arseniko cheese is often referred to as the King of Greek cheeses because of its potent, piquant taste, that gets stronger as it ages. It’s one of the oldest Greek cheeses, still made the traditional way today. I visited Yiannis and Kostas at Armeos farm on the island of Naxos, a 350-year-old family farm, to see how the cheese is made.
