It was my first time cooking a paella on the newly purchased Weber Baby Q, outside on the balcony.
The heat was not quite strong enough to form a really good socarrat but it still formed a descent crust and it was super delicious! Maybe I'll try cranking up the heat at the end next time.
Hope you enjoyed the background noise ie the inner city traffic and the ding from the tram!
INGREDIENTS:
- 1 cup paella rice
- 2 1/2 cups seafood stock (homemade)
- olive oil
- 1 x onion (finely diced)
- tomatoes (I used 1/2 a tin of roma tomatoes)
- 3 garlic cloves (finely chopped)
- 1/2 tsp smoked pimenton
- squid (cut into squares)
- pipis (clams) - mussels are great (I just didn't want to clean them today)
- prawns
- roasted capsicum (I use a store bought one)
- saffron threads
- spring onions to garnish
- sea salt
