This is a real SHERRY BOMB!
Is their new Single Pot Still, finished in PX casks a good whiskey? Let's find out!
This week, we're looking at the last of the three new whiskeys from the Boann distillery. While they still release sourced whiskey under the "Whistler" range, this is entirely their own distillate!
It's about three and a half years old, and spent about two and a half years in ex-oloroso sherry casks before being finished in PX sherry casks for a year. It comes in at 47% ABV, is natural colour and non-chill filtered. Interestingly, some of the oloroso casks were the same ones they used for their first release under their sourced whiskey range, the Whistler Blue Note, so there's a nice continuity from the past to the present.
While this is a core product, it will evolve over time, as future bottlings will incorporate older whiskeys as their stocks mature, and the mashbill will change. That's because when they first started running their stills, Boann were using a 50/50 split of malted and unmalted barley, but they have since switched over to a slightly more complex mashbill of 50% unmalted barley, 48.5% malted barley, 1.1% oats and 0.4% rye. While that sounds like it's only a small change, it actually has a huge impact on the final spirit, and their New Make has won plenty of awards, so expect the profile to evolve in the coming years.
But it's what's inside THIS bottle right now that counts, so let's get to it!
Boann Single Pot Still - PX Cask Finish Tasting Notes:
Nose:
It's VERY sherry on the nose, with the PX sherry giving it a thick, stewed figs character which works well with the peppery pot still spice and some almost savoury nutty notes from the oloroso casks
Palate:
The mouthfeel is rich and syrupy, with some more peppery spice and crystallised sugars on the first sip. After a second sip, I got orange peel, cinnamon and baking spices, with some walnut.
Finish:
Quite sweet, with the mouthfeel giving the whiskey a bit of a medium-long finish, but not super long. There's no extra notes that appear in the finish, just a nice lingering sherry note with a touch of pot still spice.
