Sev khamani
Portion size: 4-5 servings
Preparation time: 10 mins
Cooking time: 20 mins
Calories: 470 per portion
Ingredients
Chana dal soaked 2 cups
Oil 2 tbsp
Mustard seeds 1 tbsp
Hing 1 tsp
Green chillies 5-6 pcs
Ginger ½ inch
Coriander chopped for garnish
Salt ½ tbsp
Eno (fruit salt) 1 tsp
Pomegranate for garnish
Lemon 1 pc
Chutney for sev khamani
Coriander ½ cup
Green chillies 2 pcs
Garlic cloves 5-6 pcs
Salt ½ tsp
Lemon juice 1 tsp
Sev khamani 2 tbsp
Water as required
Method for Sev khaman
Take a mixer jar, add soaked chana dal, green chillies, ginger, salt, hing, turmeric powder, very little water and coarse grind them.
Transfer it to a bowl, add baking powder, some water and mix it.
Heat a pan, add oil, mustard seeds and let it crackle.
Then add coarsely grinded chana dal mixture and stir it.
Cook it for 25-30 mins on low flame. Cover it with a lid and stir in intervals.
Once cooked, keep stirring until it becomes grainy.
Garnish it with chopped coriander, nylon sev, pomegranate seeds, squeeze a lemon and it's ready.
Serve Sev khamani with the green chutney.
Method for Green chutney
Take a mixer jar, add coriander, garlic cloves, green chillies, salt, lemon juice, sev khaman mixture, water and finely grind it.
Green chutney for Sev Khamani is ready.
