Ingredients :
1 finely chopped Pineapple
1/4 cup water
1 tsp Oil
1/2 tsp Fenugreek Seeds (Methi)
1 tsp Bengal Gram Split (Chana Dal)
1 tsp Split & Skinless Lentils (Urad Dal)
2 dry Red Chillies
1 tsp Cumin Seeds (Jeera)
Pinch of Turmeric (Haldi)
Salt as per taste
1/2 tbs Jaggery (Gur or alternatively use Sugar)
2 tbs roasted crushed peanuts
1/2 lemon juice
To garnish : Pomegranate & Sesame Seeds & some Mint leaves
Method :
Pressure cook 1 finely chopped Pineapple up to 3 whistles (semi ripped Pineapple cook along with 1/4 cup water)
Heat the pan to make Masala
Add 1/2 spoon Oil
Add 1/2 tsp Fenugreek Seeds (Methi)
Add 1 tsp Bengal Gram Split (Chana Dal)
Add 1 tsp Split & Skinless Lentils (Urad Dal)
Add 2 dry Red Chillies
Roast until golden-brown & turn off the heat
Once cooled churn in a mixie to make fine powder
Gently mash boiled Pineapple with the help of masher
Meanwhile heat the same pan
Add 1/2 tsp Oil
Add 1 tsp Cumin Seeds (Jeera)
Add a pinch of Turmeric (Haldi)
Now add boiled Pineapple
Add salt as per taste
Add 1/2 tbs Jaggery (Gur or alternatively use Sugar)
When Jaggery melts add Masala prepared
Mix everything well and cook for 5 min on medium heat
Add a spoonful of water if the mixture is too thick
When chutney is cooked, add 2 tbs roasted crushed peanuts
Turn off the heat and let it cool down
Add 1/2 lemon juice and mix it
Serve this Pineapple Chutney as a Dip, Spread or with Toasted Bread, Roti, Partha or even with Dal Chawal
Garnish with some Pomegranate & Sesame Seeds & some Mint Leaves
