Tinola is a classic Filipino chicken soup. Traditionally, this dish is cooked with chicken, wedges of green papaya, and leaves of the siling labuyo chili pepper in broth flavored with ginger, onions and fish sauce.
In this recipe, i will be using baby spinach as an alternative for chili leaves or malunggay leaves.
Ingredients:
1 kg chicken (tinola/adobo cut)
1 green papaya
1 onion
1 garlic
2 thumbs ginger
4 tbsp fish sauce (sauce)
4 cups water (or until it just cover the chicken)
1 chicken broth/stock cube
ground black pepper
green chili
onion leaves (optional)
baby spinach (optional)
