Recipe: Palm Sugar Pancake. [YT: CARA MEMBUAT KUE CUCUR YANG UWEEENNAAAK!!!]
Ingredients:
250gr of White Flour.
200gr of Rice Flour.
300gr of Palm Sugar.
Pandan Leaves.
200ml of Coconut milk (for mixing).
500ml of coconut milk (mixed with coconut water).
Salt.
Steps:
First put in the pandan leaves to the cooking pot, and add in the palm sugar, then pour in 200ml of coconut milk, then heat it up on the stoves. Stir it until the palm sugar is melting and mixed with the coconut milk. Cook it until boiling and keep stirring so it doesn’t get burnt.
Turn off the stoves, then cool it down for a while then add in 500ml of coconut milk (mixed with the coconut water) then filter the palm sugar liquid to a jar/jug.
Now put in the Rice Flour into the Bowl, then add in the White Flour, ½ teaspoon of salt, stir it, then mix it using mixer and add the Coconut milk & palm sugar mix. Continue mixing until became smooth and well blended. Add in some more of the palm sugar mix into the mixer.
Continue mixing until it became soft and expanding. (mix it for 10 minutes & use high speed)
Turn off the mixer then wait for 30 minutes cover it.
Uncover it, then heat up some oil in the fry pan, then pour in the mix into the frying pan (like making a pancake), then fry it until became dry and brown colored.
[Tips: if you want the cake not easily get burnt, scramble some egg on the hot oil, thus reducing the oil amount and making it not sticky. Then take out the egg and pour in some new cooking oil then, pour in the cake mix afterwards.]
Repeat until all of the mix is all cooked.
Place the cake to a plate and ready to be served. Enjoy.
