1 pack of udon noodles
1/2 piece (10g) of abura-age (fried tofu)
For the Abura-age Seasoning:
100cc water
1 tablespoon mirin
1 teaspoon sugar
1/2 tablespoon soy sauce
For the Udon Broth:
300cc water
2 tablespoons mirin
2 tablespoons soy sauce
1/4 teaspoon Japanese granulated dashi
🫕Cooking steps:
1)Prepare Abura-age: Pour boiling water over abura-age to remove excess oil. This improves flavor absorption and reduces odor.
2)Cut Abura-age: After removing the oil, cut the abura-age in half.
Season Abura-age: In a small pot, mix the seasoning ingredients and add abura-age. Heat over medium until boiling, then simmer on low for about 5 minutes.
3)Cook Udon: Boil water in a large pot and add frozen udon noodles, loosening them. Cook as per the package instructions.
4)Prepare Soup: Simultaneously, prepare the soup in a separate pot. Combine all soup ingredients and heat until boiling, then turn off the heat.
5)Assemble Dish: Drain the udon noodles and place them in a bowl. Pour the soup over the noodles and top with the seasoned abura-age.
6)Optional Toppings: Enhance the dish with toppings like wakame, green onions, or tempura flakes as desired.
