Coconut Barfi
Ingredients:
Fresh Coconut - 2
Condensed Milk - 1 cup (250 gms)
Almonds
Pistachios
Cardamoms Powder
Ghee - 3 TBSP
Procedure:
1. Take 2 fresh coconuts, peel the brown skin and wash thoroughly.
2. Once the water is drained completely chop the coconut into small pieces and grind it coarsely.
3. Add 4 TSP of ghee in a pan and heat it
4. Once the ghee is hot add the ground coconut in the pan and roast it for 5 minutes on medium flame by stirring continuously
5. Add the condensed milk and cook until there is no moisture left and the coconut mixture starts getting thick and sticky.
6. Once the mixture becomes sticky add 2 TSP of cardamom powder and mix it well.
7. Cook for 5 minutes and switch off the flame.
8. Grease the container with ghee in which you want to set the burfi.
9. Add the coconut mixture and spread it evenly, make sure you press it well so that there is no gap in between.
10. Garnish with your favourite nuts like Almonds and pistachios.
11. Lastly sprinkle some cardamom powder on top.
12. Keep the container in fridge for three hours or overnight outside.
13. Cut in desired shape and serve chilled.
