Ingredients:
For the cupcake:
1 cup all purpose flour
1 cup sugar
6 tbsp cocoa powder
1 tsp baking powder
½ tsp baking soda
2 eggs
½ cup milk
½ cup oil
½ cup hot coffee
1 tsp vanilla essence
For the cherry filling:
1 cup frozen black cherry
1 tbsp sugar
1 tsp cornstarch +2 tbsp water
1 tbsp cherry liqueur
For whipped cream :
1 cup heavy whipping cream
2 tbsp icing sugar
1 tbsp cherry liqueur
For garnishing:
Cherry
Dark chocolate shavings
Directions:
Preheat the oven to 350 degrees F.
Sift flour, cocoa powder, sugar, baking powder and baking soda into a bowl.
In another bowl whisk the eggs, milk and oil.
Add the flour mixture and combine.
Add the hot coffee and mix well.
Add a teaspoon of vanilla essence and combine.
Divide the batter into a lined cupcake tray( this batter makes 12 cupcakes)
Bake at 350 degrees F for about 20 minutes or until a toothpick inserted in the center comes out clean.
Meanwhile make the cherry filling by adding the cherries, sugar and cornstarch slurry to a saucepan. Heat over medium heat, stirring often, until the mixture has thickened Now add the cherry liqueur ,remove from flame and allow to cool.
For making the whipped cream, In a bowl add cold heavy cream and add 2 tbsp icing sugar and beat using a handheld mixer until it thickens. Now add the cherry liqueur and whisk again on low speed until stiff peaks form.
Transfer the whipping cream into a piping bag .
Once the cupcakes are cooled cut out a hole in the center of the cupcake.
Scoop about a teaspoon of the cherry filling into i each cupcake.
Then pipe the whipped cream on top. Garnish with dark chocolate shavings and a cherry on top,
