**For Tadka:**
- 1 tsp Jeera (Cumin Seeds)
- 2 Tez Patta (Bay Leaves)
- 2 Badi Elaichi (Black Cardamom)
- 3 Choti Elaichi (Green Cardamom)

- 5-6 Black Peppercorns
- 1-inch Cinnamon Stick
- 2 pinches Kasuri Methi (Dried Fenugreek Leaves)
**For Gravy:**
- 1 tbsp Mustard Oil (for cooking)
- 3 medium Onions, finely chopped
- 1 pod Garlic, 1/2 inch Ginger, Green Chilies (to taste) – grind into a fine paste
- 1 tsp Haldi (Turmeric Powder)
- 2 tsp Kashmiri Red Chilli Powder
- 2 tsp Dhania Powder (Coriander Powder)
- 1/2 cup Hot Water (to add in intervals)
- 3 medium Tomatoes – grind into a paste
- 1 cup Green Peas (Matar)
- 1/2 cup Fresh Malai or Cream
- Salt (to taste)
- 1 medium Capsicum, chopped
- 200g Mushrooms, chopped
- 1/2 tsp Garam Masala Powder
- 1/2 tsp Kasuri Methi (Dried Fenugreek Leaves)
- 2 tsp Fresh Coriander, finely chopped (with stems) for garnish
- Hot Water (to adjust gravy consistency as needed)

**Instructions:**
1. **Prepare the Tadka:**
- In a pan, heat 1 tbsp mustard oil. Once hot, add 1 tsp jeera, 2 tez patta, 2 badi elaichi, 3 choti elaichi, 4 laung, 5-6 black peppercorns, 1-inch cinnamon stick, and 2 pinches of kasuri methi.
- Sauté for about a minute until aromatic.
2. **Cook the Onion and Masala Paste:**
- Add the finely chopped onions to the pan and cook them until they're about 90% done.
- Add the 3G paste (ginger, garlic, green chillies) and cook thoroughly until it turns aromatic.
3. **Add Daily Spices:**
- Mix in 1 tsp haldi, 2 tsp Kashmiri red chilli powder, and 2 tsp coriander powder with the onions and tadka. Stir well.
- Gradually add 1/2 cup hot water in intervals to cook the masalas well, making sure the spices are fully blended with the onions.
4. **Add Tomato Paste:**
- Pour in the tomato paste and cook for about 5 minutes, or until oil starts to ooze from the mixture.
5. **Add Green Peas (Matar):**
- Add 1 cup green peas, stir them into the masala, and cook for 5 minutes.
- Add hot water in intervals as needed to ensure the paste cooks evenly, and wait until oil begins to separate again.
6. **Add Fresh Malai (Cream):**
- Mix in 1/2 cup fresh malai or cream, stirring continuously for 3-4 minutes until it's well combined with the gravy.
- Season with salt according to taste.
7. **Add Capsicum and Mushrooms:**
- Add the chopped capsicum and mushrooms to the gravy, mixing them well with the masala. Cook for 2 minutes, stirring constantly.
8. **Adjust Gravy Consistency:**
- Pour in hot water to adjust the gravy consistency as per your preference. Cover the pan and cook for 10 minutes, allowing the flavors to meld.
9. **Finish with Garam Masala and Kasuri Methi:**
- Add 1/2 tsp garam masala powder, 1/2 tsp kasuri methi, and 2 tsp fresh coriander (including stems) to enhance the flavor.
- Cover and cook for an additional 2 minutes before turning off the heat.
10. **Garnish and Serve:**
- Garnish with freshly chopped coriander and serve hot with roti, naan, or rice.
