Today's recipe is a simple and aromatic Amaranth Rice, also called Keerai Sadam/Cheera Rice/Thotakura Annam.
It's very nutritious dish, a whole meal by itself and a convenient packed food too.
This Leafy Vegetable is so versatile,you can churn out,hundreds of recipes using its leaves and stems.What I offer today is a easy peasy meal,often made and enjoyed in my household.Here we go.....
Amaranth Rice/Keerai Sadam
Cheera Rice/Thotakura Annam
Ingredients:
3 Cups Cooked Rice
2-3 Cups chopped Amaranth Leaves
1 tsp Cumin Seeds
8-10 Cloves of Garlic
1 Large Onion
5-7 Green Chillies
1/2 Cup or more grated Coconut
1/4 tsp Turmeric Powder
Salt to taste
Serves: 2 Persons
Cooking Time: 30 minutes.
Procedure:
* Cook and keep Rice ready.
* Heat Oil in a Pan and saute Cumin Seeds till they turn aromatic and golden.
* Finely chop Garlic,Onion and Green Chillies.
* Saute till they get tender and translucent.
* Toss in Turmeric powder and Salt to taste and saute till aroma spreads.
* Add finely cut Amaranth Leaves and saute for a while.
* On moderate flame, cover and cook till done.
* Add cooked Rice ,mix thoroughly.
* Garnish with grated Coconut and serve it hot with Papad or Fryums!
