Have you ever tried these "TAUHU BERGEDIL"? If you haven't, you should! This crispy stuffed tofu puffs is a popular dish, either for a side dish or an appetizer in Indonesia and usually it serve with nasi kuning' yellow rice' or soto ayam. Perkedel is what the local call it in Indonesia and where its originated from too. Throughout generation after introducing by Javanese the pronunciation have somehow transform into what is now called in Malaysia and Singapore as Bergedil or begedil.
Usually the tauhu bergedil is filled with meat and to forget mashed potato is also one of the main ingredients but to make it into vegan, i substitute the meat with mushrooms! Scroll down for the recipe.
Recipe:
10-14 tofu puffs
100g mushrooms, chopped
2 boiled potatoes
1/4 cup fried shallots
Handful chopped coriander
1/2 tsp white pepper
salt for seasoning
1 cup plant milk
2 tbsp vegan mayo
1/2 cup cornstarch
Dipping sauce:
2 tbsp soy sauce
3 tbsp tomato ketchup
2-3 chilli pepper
1 tbsp sugar
1 tbsp lemon juice
