Bhaat na rasawala muthia or Rasiya muthia recipe – a Gujarati recipe which is my family favorite. Muthia are made from leftover cooked rice and simmer in buttermilk-spices gravy. Here amount of rice is high which makes muthia soft.
Rice muthia are simmer in thin yogurt gravy. As it is boiling, muthia will get cooked and gravy will become thick.
Bhaat na rasawala muthia is one of the most interesting ways to use leftover rice, and reflects two general traits of gujaratis—they prefer to have a light meal in the evenings, and never like to waste cooked rice! simply-flavoured muthias made with cooked rice and simmered in a spiced curd mixture, this dish leaves the diner satisfied but does not overload the stomach—all of which makes it an ideal choice for the evenings.
For Muthia
1 cup Cooked rice
1/2 cup Chickpea flour / Besan
2 tablespoons Whole wheat flour
1 Green chili, finely chopped
2 teaspoons Ginger , grated
1/2 teaspoon Coriander powder
1/2 teaspoon Red chili powder
1/4 teaspoon Turmeric powder
Sugar, a pinch
1 teaspoon Lemon juice
Salt - to taste
For Gravy
1/4 cup Yogurt
1/4 teaspoon Turmeric powder
1/2 teaspoon Red chili powder
1/2 teaspoon Cumin powder
1/2 teaspoon Coriander powder
1 tablespoon Oil
1/4 teaspoon Mustard seeds
1/4 teaspoon Cumin seeds
4 Curry leaves
1/2 teaspoon grated ginger
1 Green chilies finely chopped
Salt - to taste
Coriander leaves - few sprigs finely chopped
INSTRUCTIONS
Mix cooked rice, flour and besan along with chopped chillies, ginger, turmeric powder, coriander seed powder, chilli powder, salt, lemon juice and little sugar well. Knead into dough without adding water.
Make small flat bead shaped muthias from dough and keep aside.
Mix with yogurt turmeric, red chili, cumin, coriander powder and salt. Add water and keep aside.
Heat oil. Splutter mustard seeds, cumin seeds, green chillies, ginger and curry leaves.
Add yogurt mixture and bring to boil. Add muthias slowly and simmer till muthias are cooked.
Garnish with coriander leaves and serve Rasiya Muthia hot with roti or rice.
