Spanakopita aka Spinach Feta Pie is a Greek pie made with layers of fillo encased in a savory spinach feta filling. It’s quite buttery and it’s almost similar to what we Indians know as “Puff”. Well the only difference is that between these two is the way the dough is made. Here I've used store bought Fillo sheets but you can use homemade ones as well. But trust me, Store-bought ones make the work so much easier!
Fillo sheets are widely available these days in most of the Indian supermarkets. If you’re from Chennai, you can purchase these from JK cheese & more and Chennai grocers.
Recipe:
Serves: 5
Ingredients:
Unsalted Butter - 2tbsp + 50gms
Onions - ½ cup
Spring onions - ½ cup
Garlic - 6 medium cloves
Spinach - 4 cups or 2 big bunches
Feta cheese - 200gms
Black pepper - 1tbsp
Nutmeg - ¼ tsp
Fillo sheets - approx. 10 sheets
Sesame seeds - 1 tbsp
Method:
- Saute onion, spring onion, garlic and spinach. Remove excess liquid.
Add the mix to a bowl and add feta cheese, black pepper & nutmeg. Mix to combine. Set it aside.
- Grease a pie dish with butter and layer the fillo sheets. Using a pastry brush, spread melted butter over the fillo sheets and repeat this for 5 layers.
- Then add the prepared spinach feta filling and enclose it using the remaining fillo sheets.
- Using some more fillo sheets, crumble them to form a flower like design for a rustic look.
- Sprinkle with sesame seeds and bake at 200C for 30 minutes or until golden brown.
- Serve warm.
