Healthy Baja Fish Tacos with Mango Salsa
Ingredients:
**For the Fish Tacos:**
- 1 lb mild white fish (such as cod)
- 2 tbsp extra-virgin olive oil
- 1/4 cup fresh orange juice
- 2 tbsp taco seasoning (store-bought or homemade, I use Siete brand)
- 1/4 cup Greek yogurt
- 2 tbsp mayonnaise (I use avocado oil mayo)
- 2 tbsp fresh lime juice
- 1 tsp Old Bay Seasoning
- 2 cups shredded cabbage (or coleslaw mix)
- Tortillas, warmed
**For the Mango Salsa:**
- 1 cup fresh mango, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- 2 tbsp fresh lime juice
- 1/2 tsp ground cumin
Instructions:
**1. Prepare the Mango Salsa:**
- In a medium bowl, combine the diced mango, red bell pepper, red onion, cilantro, and jalapeño.
- Add the fresh lime juice and ground cumin.
- Toss everything together until well mixed. Set aside.
**2. Marinate the Fish:**
- In a shallow dish, mix the orange juice and taco seasoning.
- Add the fish to the marinade, turning to coat. Let it sit for about 15 minutes.
**3. Cook the Fish:**
- Heat the olive oil in a large skillet over medium-high heat.
- Remove the fish from the marinade, shaking off excess, and place it in the skillet.
- Cook the fish for about 3-4 minutes on each side, or until cooked through and flaky.
- Remove from heat and let it rest for a few minutes before flaking into pieces with a fork.
**4. Prepare the Baja Sauce:**
- In a small bowl, mix together the Greek yogurt, mayonnaise, fresh lime juice, and Old Bay Seasoning.
**5. Assemble the Tacos:**
- Warm the tortillas in a skillet or microwave.
- Spread a spoonful of Baja sauce on each tortilla.
- Add a portion of the shredded cabbage.
- Top with pieces of the cooked fish.
- Spoon the mango salsa over the top.
**6. Serve:**
- Serve the tacos immediately with extra lime wedges and any remaining Baja sauce on the side.
