Thai food classic - Red Curry. Fun fact, literal meaning should actually be "Spicy" Curry. It's super simple if you just stick to the "Must have" ingredients I marked in the video.

Ingredients (the end of video shows 1 out of 2 portions from below ingredients. 1 portion is enough for one person if eaten with rice):
1) Chilli: 1-2 chillies (Optional)
2) Kaffir Lime Leaf: 3-4 leaves (Optional)
3) Sweet Basil: 1 bunch
4) Thai Eggplant: 5 pieces (about 225 grams / 8oz.)*
5) Cherry Tomato: 15 pieces
6) Chicken: 220 grams / 8 oz. (thigh or breast)
7) Vegetable oil: 2 tablespoons
8) Red Curry Paste: 2 tablespoons
9) Coconut Milk: 1 cup
10) Water: 1/2 cup
11) Fish Sauce: 1 tablespoon
12) Sugar: 2.5 tablespoons
*can be replaced with light flavoured vegetable, e.g. cauliflower, green bean.
