Vietnamese Style Noodle Salad with Citrus Dressing
It’s been so hot all I could think about is a cold refreshing Vietnamese style noodle salad, in honor of the new Barbie movie. I wanted to make this one pink. It turned out so delicious and refreshing. I can’t have enough!!!! Ingredients:
13 oz rice noodles
1 packet pink natural food coloring
1/4 cup gluten-free vegan fish sauce
1/4 cup gluten-free vegan soy sauce
1/2 cup vegan sugar
3 cloves of garlic
1 cup water
1/2 cup fresh lime juice
1/2 cup rice wine vinegar
1 dried Thai chili
4 cups cut into strips English cucumbers
4 cups cut into strips red and orange sweet peppers
3 cups cut into strips, carrots
4 cups fresh herbs ( cilantro, mint, basil) cilantro, chopped the other herbs left in Whole leaves, picked off the stems.
1 jalapeño pepper, thinly sliced
1 Serrano pepper, thinly sliced
1 cup chopped roasted, salted peanuts
Directions:
Boil water, mix in the food coloring, add the rice and noodles, and allow to soften for about five minutes. In the meantime, cut the vegetables, trim the herbs and chop the peanuts. Mix the dressing by adding water to the soya sauce, and the vegan fish sauce, add the lime juice and the sugar, add the rice vinegar and dried chili and set aside. Drain the rice noodles from the pink water, add to the bowl with the cut vegetables, add the herbs and the dressing, toss gently. Served garnished with the chopped peanuts.
